Best recipe for Nan-Khatai

 Nan-Khatai:

Nan-Khatai is the traditional biscuit of sub-continent(Pak-Ind.)It is very quick and easy to made .It is traditionally made of samolina(suji),gramflour(baisan),pure desi ghee ,sugar and topped with some nuts such as almonds and pistachio for flavour.

It  is said that Nan- khatai comes from the word Nan (bread) and persion word Khatai (biscuit)



It is a perfect tea time snack in sub-continent(Pakistan and India )



Recipe;

Ingredients:

1.All purpose flour(maida)                   1 ,1/2cup

2.pure desi ghee                                     1 ,1/2cup

3.  powder sugar                                    1 ,1/2cup

4. almonds                                              1/2 cup

5. gram flour(besan)                             1/2 cup 


6. semolina (suji)                                   4tbsp

7.baking powder                                   1tbsp

8. egg yolk                                             1

9.cardamom powder                              1tsp



 Directions:

1.First of all you should mix the powder sugar and ghee with the help of whisk.

2.Sift all the dry ingredients such as semolina ,all purpose flour and gram flour.

3.Add all the dry ingredients in the mixture of sugar and ghee.

Also add baking powder and cardamom powder and mix all the ingredients very well.

4.Pre- heat the oven at 180 degrees for about 15-20 minutes.

5.In the dough also add some chopped almonds and kneed the dough until it become soft . There should be no lumps in the dough.

6.Cover and refrigerate the dough about 10-15 minutes.

7.Take the mixture and made 10-12 small balls, apply egg yolk wash and garnish with some roasted almonds on top.

8.Place on the baking tray and put into the pre heated oven for about 15-20 minutes.

9.Put the nan -khatai out of the oven and allow them to cool at the cooling rank for about 30-40 minutes or until they completely cool down .

10.You can store them in the air tight container for about 1-2 months .
